Aspartic acid is slightly soluble in water, hardly soluble in ethanol and diethyl ether, and soluble in boiling water. It can form salts with acids as well as with bases. From the structure of aspartic acid, it can be seen that due to the presence of asymmetric carbon atoms in its molecule, aspartic acid exhibits optical activity. Additionally, depending on the spatial arrangement, the aspartic acid that constitutes proteins belongs to the L-type.
